BEST SWEET POTATO HUMMUS RECIPE
Our family has a summer barbecue each year, that I especially look forward to! This last one, my niece Kendra was there, along with the BEST SWEET POTATO HUMMUS. That was pretty much what I ate that night! I especially loved that is was healthy! Clearly I was hoping that I could get her to share her recipe with me, so I could give it to my husband! Contrary to me, he gets so much more enjoyment out of preparing yummy food than I do!
Since then, we have shared it with so many others. It’s gotten quite the reputation within our circle of family and friends as being the BEST Sweet Potato Hummus ever. It’s easy, fairly quick, and healthy too! Having healthy snacks available to eat at any time is so important. With a bag of cut up raw veggies in the refrigerator, there won’t be any excuses for unhealthy snacking! This is a great way to get your veggies AND your protein when you start to feel the munchies!

RECIPE~

1 can garbanzo beans (drained not rinsed)

1 yellow onion (rough chop)

1 sweet potato (peeled, rough chop)

2 small carrots (peeled, rough chop)

3 cloves garlic

Tahini paste 1/4 c.

Salt

Hot sauce

In a heavy bottomed pan with a lid, heat olive oil and saute on high heat the carrot, onion, garlic & sweet potato. Sauté them long enough to just start to get a little bit of caramelization, then turn the heat down to low and put a lid on them till the potatoes are soft. In a food processor, puree the beans, softened veggies, tahini, salt and hot sauce to a smooth consistency. ENJOY!
