
PASTA SALAD WITH CALIFORNIA GRAPES
I have loved sharing my California grape recipes with you, and this one is absolutely delicious! Grapes are such a versatile ingredient…. they add sweetness, texture, and that juicy pop that makes any dish a stand out. And for me and my husband, they’re our go-to snack. We always keep grapes in the fridge, perfect out on the golf course.
Think about this…. HAPPY add HEALTHY! Taking grapes beyond snacking and into a dish that’s perfect for potlucks, family gatherings, even a simple weeknight dinner, is definitely HAPPY! When sweet, juicy GRAPES FROM CALIFORNIA meet crunchy walnuts, creamy goat cheese and fresh veggies…. you get the ultimate pasta salad upgrade! Perfect for feeding a crowd (this one serves six!) and making ahead for easy lunches all week long. I LOVE how grapes add that unexpected pop of sweetness… truly the star ingredient here!
INGREDIENTS
12 oz. bowtie pasta
2 cups red California grapes, halved
1 cup cucumber, diced
1 cup red bell pepper, diced
1/2 cup green onions, sliced
3/4 cup crumbled goat cheese
3/4 cup toasted walnuts, chopped
1/4 cup fresh parsley or basil, chopped
DRESSING
1/3 cup olive oil
3 Tbsp red wine vinegar
2 tsp Dijon mustard
1 Tbsp honey
1 garlic clove, minced
Salt & pepper to taste
INSTRUCTIONS
Cook pasta until aldente’, drain, rinse, and cool. In a large bowl, mix pasta, grapes, veggies, cheese, walnuts, and herbs. Whisk dressing ingredients and pour over salad. Toss gently and chill 30 minutes before serving.
