Because this is SO DELICIOUS, I’m sharing with you today….. how I make COWBOY CAVIAR. This vibrant, veggie-packed mix embodies the essence of summer picnics and barbecues. This recipe was shared with me from a wonderful family friend. I was IN LOVE as soon as I tasted it! It’s not only delicious, but colorful and so pretty to look at. For me, I prefer to eat on the lighter side throughout the heat of the summer months. Cowboy Cariar is so lite and yet has all the nutrition you’ll need to feel your best!

This recipe combines the fresh crunch of various vegetables, including bell peppers, fresh corn, tomatoes, black beans, red onion, avocado, and a yummy bottled dressing that brings all these flavors together. Simply chop the veggies, mix in the beans and avocado very last, and toss it all with the dressing. It also goes well with eggs, or possibly inside of a wrap.

RECIPE

FRESH CORN

RED PEPPER

GREEN PEPPER

RED ONION

TOMATO

BLACK BEANS DRAINED

AVOCADO

FRESH LIME JUICE

LITEHOUSE RED WINE VINEGAR WITH OLIVE OIL DRESSING

Mix preferred quantity of the ingredients together, adding avocado last. Toss together and store in refrigerator covered. This will last for at least four days. We eat it with corn chips, but can be used with eggs, or even as a wrap.
