Sweet Potato Bites

It’s been a while since I’ve posted anything from the kitchen….. cooking isn’t my strongest suit! But I couldn’t resist these SWEET POTATO BITES. I’m a huge fan of sweet potatoes, especially because they’re super nutritious. I wanted to share this delicious and healthy find with you, it’s really easy to make too!!!!

Did you know…….. sweet potatoes are a nutritional powerhouse, packed with essential vitamins and minerals. Rich in vitamins A, C, and B6, they support immune function, skin health, and brain development. High in dietary fiber, sweet potatoes aid in digestion and help maintain a healthy gut. Their natural sweetness comes with a low glycemic index, which means they are a great option for managing blood sugar levels. Additionally they are loaded with antioxidants like beta-carotene, which promotes overall well-being.

This recipe is super easy, and stores well in the refrigerator for a couple of days. It makes such a great snack….. I would even have this for breakfast!

Sweet Potato Bites

2 medium sweet potatoes sliced into 1/2 inch rounds

Olive oil

Salt

TOPPING:

1/2 cup toasted walnuts

1/4 cup baby spinach

1/2 cup dried cranberries

1/4 tsp. salt

Pepper to taste

3 T honey

1/2 tsp orange zest

RICOTTA:

3/4 cup ricotta cheese

1/4 cup blue cheese crumbles (I would actually add more next time)

Preheat oven to 425. Drizzle the sheet pan with olive oil, then brush it to coat. Sprinkle the sheet pan with salt. Spread the sweet potatoes onto the pan and brush the tops with olive oil and season with salt. Cook for 20-25 minutes, flipping halfway. While the sweet potatoes roast, make the topping. Chop the walnuts, add the spinach and cranberries and chop together. Place the mixture into a bowl and add the salt, pepper, zest and honey. Add the ricotta and the blue cheese in a separate bowl and mix. Plate the sweet potatoes, place a dollop of the ricotta mixture on each round, then a small spoonful of the topping.

These are now MY FAVORITE MEAL………….. yes I will eat them as my meal, with some fruit!
