CALIFORNIA GRAPES MEET BRUSSELS

I’ve always loved Brussels sprouts, and I want to introduce you to my new favorite combo….. Brussels sprouts with fresh California grapes, thyme, walnuts, and a drizzle of honey and perhaps some balsamic glaze. The sweet burst from the grapes perfectly complements the earthy Brussels sprouts, creating a mix of flavors and textures that’s to die for. Here’s the recipe I’ve fallen in love with!
Roasted Brussels Sprouts with California Grapes, Thyme, Walnuts, and Honey
Ingredients:
1 ½ lbs Brussels sprouts, trimmed and halved
1 cup seedless California grapes (red or black), halved
3 tbsp olive oil
2 tbsp fresh thyme leaves
½ cup walnuts or hazelnuts, roughly chopped
2 tbsp honey
Salt and freshly ground black pepper, to taste
Optional: 1-2 tbsp balsamic vinegar for extra depth
Instructions:
Preheat oven to 400 degrees. In a large bowl, toss Brussels spouts and grape halves with olive oil, thyme, salt, and pepper, to coat well. Spread the Brussels sprouts and grapes on a baking sheet in a single layer. Roast for 20-25 minutes, tossing halfway through roasting time, until the sprouts are crispy and caramelized and the grapes are soft. For added crunch, sprinkle the walnuts over the mixture during the last 5 minutes or roasting. Remove from the oven, and while warm, drizzle with honey and balsamic glaze. These are totally optional.
Serve warm, and enjoy the delightful contrast of juicy California grapes, crunchy walnuts, and savory Brussels sprouts. When California Grapes meet Brussels…. you’re bound to have deliciousness!
